Known for their crisp and tender texture, they are not only great for cold salads but also for cooking various dishes and soups. In New Taipei City, a major production area, green bamboo shoots are considered one of the 'Healthy Three Treasures.' During this season, in addition to teaching picking tips, there are also simple cooking methods shared. Additionally, the Agriculture Bureau of New Taipei City has been promoting the bamboo shoot industry with evaluations and recently announced the winners of the bamboo shoot evaluation contest.
