New Face of Ramen (Part 1): Try a Bowl of Pufferfish Ramen at a Japanese Fish Market in Taiwan as a Gesture of Gratitude from Japanese Chef

Reported 9 months ago

The signboard dish of 'Fujitetsu Shogyo' is the 'Pufferfish Ramen,' a rare find in Japan, limited to 30 bowls daily (NT$839/set, with a choice of fried wontons, karaage chicken, cucumber pickles, and another choice of fried wontons or yuzu radish; NT$690/bowl individually). Located near Zhishan MRT Station in Taipei, 'Fujitetsu Shogyo' provides an immersive ramen experience with a fish market setup designed by a film scenery company, inspired by the Japanese head chef Fujihara Kazutomo. Having expertise in Japanese banquet cuisine and being grateful to Taiwan for help during the 3/11 tsunami disaster, Chef Fujihara decided to introduce the concept of a Japanese fish market to Taiwan through 'Pufferfish Ramen,' gaining attention in the ramen world upon its launch.
