Eating steak to build muscle but not seeing results? It could be due to choosing the wrong doneness level. Dr. Xiao Jie-jian, a weight loss physician, suggests that steak cooked to a medium-rare to medium level (5-7 out of 10) is most easily digested by the body. Heating and cooking methods like boiling, grilling, and frying can enhance protein digestion rates by altering the protein's spatial structure, allowing digestive enzymes to better interact with and break down the protein molecules. Overcooked steaks become very tough and dry, reducing enzyme efficiency, while undercooked steaks may contain more undenatured proteins that are harder for enzymes to digest. Additionally, deep-fried foods hinder protein absorption and can lead to harmful trans fats. Therefore, a moderate cooking level is optimal for steak to be easily absorbed by the body.
