The traditional Greek salad, known as Horiatiki, does not contain vinegar or lemon juice in the dressing. Instead, the authentic way involves extracting flavor by letting the fresh tomatoes sit in salt for 10-30 minutes to create a delicious tomato broth. The salad is dressed only in olive oil and seasoned with salt and dried oregano, while feta cheese is added intact on top. The dish, originating in the 1960s in Greece, features staple ingredients like tomatoes, cucumbers, red onions, olives, and olive oil, with regional variations such as purslane and green peppers but no lettuce. While adding vinegar is a shortcut for acidity, the authentic method requires time for the tomato juice to develop flavor. The salad is best served with crusty bread to enjoy the flavorful broth, known as papara in Greek.
