Dr. Li Sihuan explains that artificial trans fat found in processed foods like margarine, shortening, hydrogenated vegetable oils, and refined vegetable oils can lead to inflammation, atherosclerosis, insulin resistance, and bone health issues. In contrast, natural trans fat like conjugated linoleic acid (CLA) is beneficial. Dr. Li emphasizes the need to avoid artificial trans fat due to its detrimental effects on health, including inflammation, LDL increase, HDL decrease, triglyceride elevation, decreased vitamin K2 concentration, artery calcification, and insulin resistance.
