Notably, the nearly 50-year-old Tainan restaurant 'Ah Hui's Black Roux' was included. This restaurant is known for common items like fish balls, black roux, sausages, and pig intestines made using fresh fish paste, grilled with charcoal, attracting customers with its aroma and affordable prices. The new Michelin selections are announced monthly on their website and app, with the possibility of further accolades like star ratings in the future.
