Due to soaring cilantro prices caused by drought in Mexico, taquerias are finding alternative ingredients, like parsley or lettuce, as substitutes. The prices have increased from 110 pesos to 440-500 pesos for a 5-kilogram bunch. Water shortages affecting crop prices are also leading to higher prices for onions, broccoli, and avocado. Despite the challenges, Mexican taquerias are adjusting their dishes and some markets are opting to not purchase cilantro at all.
