Health expert Hsiao Jiejian suggests that consuming medium-rare or rare steaks, as well as slightly cooked chicken eggs, can increase muscle mass effectively, compared to well-done steaks or raw meats which are harder to digest. He emphasizes the importance of protein quality for muscle gain, based on PDCAAS (Protein Digestibility Corrected Amino Acid Score) values and cooking methods. Foods with a higher PDCAAS score, such as eggs and soy, are recommended for optimal absorption. Proper cooking techniques can enhance protein absorption efficiency by altering the protein structure, allowing digestive enzymes to break down protein molecules easily.
