Startup ÄIO Creates Edible Fat from Agricultural Waste

Estonian startup ÄIO has developed an innovative method to convert agricultural waste, such as sawdust, into edible fats suitable for food and cosmetics. Founded by biotechnology experts Nemailla Bonturi and Petri-Jaan Lahtvee, the company aims to provide a sustainable alternative to palm oil, addressing environmental concerns linked to palm oil production. With around $7 million in funding and over 100 global partnerships, ÄIO plans to scale production and navigate regulatory approvals to bring their product to market.
